Congratulations to our Ph.D. student Andrea Cesari for his scientific publication entitled “Interaction of natural flavonoid eriocitrin with β-cyclodextrin and hydroxypropyl-β-cyclodextrin: an NMR and molecular dynamics investigation” in “New Journal of Chemistry”. Many studies have focused on improving water solubility, stability and shelf-life of natural flavonoid. To overcome this problems, β-cyclodextrin and its derivatives are interesting candidates.
These compounds are characterized by a hydrophobic central cavity that usually enhances ligand solubility in aqueous solutions, affecting the physicochemical characteristics of the encapsulated ligand. In this work, NMR spectroscopy were combined with computational approaches to characterize the eriocitrin/β-cyclodextrin complex and compare it to eriocitrin/hydroxypropyl-β-cyclodextrin complex.
